This resource has become the most important seasonal fishing for Peru, being the country that most Mahi mahi fishes in the world, it catches around 47 thousand metric tons per year, for local consumption and exportation.

The Mahi mahi (Coryphaena hippurus), is a resource of warm waters, during summer or hot phenomena it becomes more accessible as it approaches the coast.
It has a rapid growth, in 1 year it can grow up to 70 cm (2.3 ft) and in its adulthood it can reach 180 cm (5.9 ft) length, from tail to the keel.
The keel, characteristic frontal protuberance, allows it to move at a higher speed. This protuberance presents sexual dimorphism, being bigger in males.
It requires proper eviscering immediately after fishing.
